Percy Drops New Spanish Wine Bar In Sydney, Inspired By Spain’s Tapas And Pintxos
The quintessential menu adds to Sydney’s love for Basque-style cuisine, influenced by the playful small plates of San Sebastián and Barcelona.

The rotating wine list brings easy-drinking organic and minimal intervention tipples from Spain and beyond, while its new refreshed interiors capture the lively spirit and warm hospitality of Spain.
Basque-style cuisine is having a moment in Sydney, as the city gets ready to welcome Percy, an intimate Spanish wine bar, inspired by San Sebastián and Barcelona’s pintxos and tapas bars. The new 50-seat venue brings a fresh wave of laid-back hospitality to the heart of Pyrmont.
The concept at Percy is rooted in authentic Basque-style cooking and quintessential Spanish swagger, reflected in its relaxed unpretentious atmosphere reminiscent of the bustling side street venues in Spain. Thoughtfully designed, the space features pottery influenced by Iberian Botijo and Pithos jugs, along with Spanish tiles and marble tops that evoke the charm of San Sebastián.
Located within the revamped Hotel Woolstore 1888 in Pyrmont, Percy’s tapas menu showcases a lineup of pintxos and small plates, offering a snack-heavy experience that celebrates the fresh flavours of Spanish cuisine. Guests can start with the famous Percy’s Gilda ($7), a twist on the traditional skewer of pickled guindilla peppers, salty manchego, and tangy olives. Other favourites include zesty Padron Peppers with Labneh ($14), savoury pan con tomate ($8) and spicy nduja butter on sourdough ($7). Highlights also feature artichoke fritters with romesco ($16), croquetas del día ($16), and fried squid bocadillo with saffron aioli ($15), creating a perfect mix of flavours for sharing.
For those looking for hearty options, the La Cocina section presents dishes like the flank steak with mojo verde ($44) and spatchcock picante with sobrasada jus ($46), rounding out an exceptional dining experience at Percy. For dessert, lemon sorbet with Arbequina olive oil ($16) and crème Catalan with caramelised white chocolate ($16) provide a refreshing finish to an exceptional meal.
Always fun and ahead of the trend, Percy embraces the growing obsession for conservas—preserved gourmet seafood like sardines, anchovies, and salmon, which are staples in the wine bars of Basque Country. Sourcing some of the finest from Spain, including offerings from leaders La Narval and Muñoz Rojo.
Percy’s menu, curated in collaboration with Percy’s Executive Chef Eli Lozada, and Chef Rosy Scatigna, brings together the pair’s wealth of local and international experience. With more than a decade of Eli’s expertise (formerly Rockpool Dining Group, Epicurean and Cirq) combined with Rosy’s time in Michelin-starred kitchens across Europe (Lume, Milan and The Hand & Flowers, London) and in Sydney (Hotel Morris, two-hatted Shell House, Hacienda Sydney).
“Spain has some of the best produce in the world, so it was only right we sourced the best ingredients we could find for Percy’s menu. Every dish has been designed to give that authentic Spanish flair. It’s all about fresh, traditional flavours that have been chosen to go perfectly with Percy’s list of Spanish wines,” says Eli.
“Percy’s menu is a representation of my experience from San Sebastián. I spent days wandering pintxos bars, tasting fresh flavours and feeling that electric buzz of people enjoying their dining experience, sharing good food and wine. We’re bringing that vibe here – think classic Gildas with a twist, squid bocadillos, and hearty dishes from La Cocina that stay true to what I love about Basque cooking. It’s food that’s made to be enjoyed in good company, where every bite has a story. Sydney’s getting a taste of San Sebastián – cool, casual, and absolutely delicious,” says Rosy.
Percy’s laid-back drinks menu embodies true Spanish style, featuring a rotating list of easy-drinking organic and minimal intervention wines, with a particular emphasis on native Spanish varietals. Sourced in collaboration with Spanish wine expert, Scott Waley from The Spanish Acquisition, the wine list showcases the best of independent Spanish wine producers, including some varietals from formally extinct grapes.
The cocktail offerings don’t take themselves too seriously, showcasing creative blends like the Riojan Sunrise ($22), which combines Spanish Gin, Gran Zinio Cava, and Hartshorn Sheep Whey Vodka, celebrated as the world’s best vodka in 2018. Served individually, it would be rude not to try the Margarita Picante ($26), made with Tromba Blanco tequila. Also featured is a generous selection of Spanish Sherry and quality spirits. Making sure there’s something for everyone, Percy’s drinks menu also includes a refreshing list of beers and ciders including Estrella which is known for being crafted in Barcelona.
Percy’s happy hour (3-6pm, Tuesday to Friday) brings the party to life with deals on tapas and cheeses. Pair these bites with the bar’s favourite Spanish Sherry and a selection of wines, creating the ultimate vibe for unwinding.

Designed for both social gatherings and intimate dining, the 50-seat venue features high bar seating and an atrium dining area with natural light peeking through. Communal tables encourage sharing and conversation, while a private dining room that seats 14 guests with a curtain offers a more intimate setting. Percy is also perfect for corporate and social cocktail events for up to 80 guests.
